What’s better than a recipe for spiced apple muffins? Two recipes for spiced apple muffins!

Spiced Apple Muffins

2 cups flour

1 cup milk

1/2 cup sugar

4 Tbsp melted fat (butter)

4 tsp baking powder

1 cup finely chopped apple

1/2 tsp salt

1/2 tsp cinnamon

1 egg, beaten

Sift dry ingredients into bowl. Combine egg, milk, fat. Mix in apple. Drop in well greased muffin tins & sprinkle on cinnamon. 400º approx 18 minutes.

Simple Basic Yeast Dough

Some of the many recipes on this site call for a basic yeast dough, and then continue on with the addition of various ingredients to make something wholly wonderful. But, I don’t think I have ever posted a basic yeast dough recipe. So, here you go.

Simple Basic Yeast Dough (flour bag)

2 pkgs active dry yeast

1/2 cup warm (not hot) water

3/4 cup warm (not hot) milk

1/2 cup butter or margarine, melted

3/4 cup sugar

3 eggs well beaten

1 tsp salt

5 to 5 1/2 cups sifted enriched flour

  1. Add yeast to water. Let stand a few minutes, stir to dissolve. Allow yeast to bloom approximately 10 minutes.
  2. Combine milk, butter and sugar. Cool to lukewarm. Add eggs, salt & 2 cups flour; beat thoroughly. Stir in yeast mixture. Blend in remaining flour. Beat 5 minutes. Do not knead. Brush with shortening. Cover and let rise until double in bulk (about 1 hour)
  3. Turn out on lightly floured surface. Knead 1 minute. Shape into any of the following variations:

Regal Peach Pie

This recipe card is really messy – not because it has spills or stains on it, but because the author of the card was clearly disorganized. They could have gone onto the back of the card to write out the instructions, but instead crammed them on the front. She also indicated “over” at one point, but there’s nothing written on the back!

Regal Peach Pie

2 cups peaches

1 tbs lemon juice

1/4 cup sugar

3 tbs cornstarch

2 tbs margarine or butter

1/4 tsp almond extract

Sprinkle peaches with lemon and sugar, let stand 1 hour. Drain. Use 1 cup of syrup, add to cornstarch & blend well. Stir this over low heat until thick. Add rest of ingredients except peaches. Cool. Place peaches in mixture…

Add peaches to cooled glaze, then pour into unbaked pie crust. Top with dabs of butter/margarine. Add a top crust. Bake at 400º 45-50 minutes.

Real Pumpkin Pie filling

I’m not really sure what “fake” pumpkin pie filling would be, but this one asserts itself as the real deal. It also is scant on the information, considering there is no amount of pumpkin to be found on the card! I don’t recommend it simply because it is incomplete. Perhaps for the spice measurements alone.

1/4 tsp nutmeg

3/4 cup milk

Pumpkin Bread

I have a love/hate relationship with these recipe cards. They fold in half so they store in a traditional recipe box in a tidy fashion, but when you open them up, they are large on the screen. I know, first world problems! I do love pumpkin bread though. All sorts of yummy goodness here. Just thinking about a warm slice with a spread of fresh butter…mmmmm. :-) This would be nice on your Thanksgiving table or just any time. Since it makes 3 loaves, they would be nice holiday gifts or housewarming gifts. Of course, we aren’t expecting to have an in-person holiday party *this* year, so we need to figure out how to shove some pumpkin bread through the zoom.

Pumpkin Bread

2/3 c shortening

2 2/3 c sugar

4 eggs

1 can (1 lb) pumpkin – (2 cups)

2/3 c water

3 1/3 c flour

2 tsp soda

1 1/2 tsp salt

1/2 tsp baking powder

1 tsp cinnamon

1 tsp cloves

2/3 c coarsely chopped nuts

2/3 c raisins

Heat oven to 350º. Grease 2 loaf pans 9x5x3. Cream shortening with sugar thoroughly . Add eggs, pumpkin and water. Blend in dry ingredients except nuts & raisins. Stir in nuts & raisins. Bake in oven 65 to 75 minutes.
