Yeast Rolls

Here I am on vacation in the South so I thought a recipe for yeast rolls would be a fitting post for today. These require scalded milk, which I don’t know yet how to make. Slather these with butter and enjoy!

Yeast Rolls – Batter – Makes 15

Mix 1/2 c scalded milk

1/4 c sugar

1 tsp salt

1/4 c shortening

When lukewarm add:

1 small yeastcake dissolved in 1/4 c warm water

1 beaten egg

2 1/4 c flour

Beat until smooth. Let rise 2 hours. Put into muffin tins – let rise 30 min more. Bake at 400 for 15 min. Start at 10 o’clock for a 1 o’clock lunch.

Cinnamon Cookies

Back in the day when women prized their recipe collections, personalized recipe cards were quite popular. They were almost like a calling card. They announced who it was who “owned” the recipe and was sharing it, and said a little bit about the woman with a decoration in the corner. This card is from Diane Wilson, assumably a friend of Gram’s. She signed the card “Dell” which must have been her nickname.

Cinnamon Cookies (Dell Wilson)

2 c butter

3 c sugar

Cream together

Add 4 eggs and beat well

Sift together:

5 1/2 c Cake flour

2 t soda

4 t cream of tartar

1 t salt

Mix the two mixtures together.

Chill dough. Roll into balls and roll balls in mixture of 4 T sugar, 4 t cinnamon.

Bake at 335 for about 12-15 minutes. Up to 15 doz cookies.

Blueberry Crisp

Since it’s spring, here’s a fruity and sweet dessert you could also serve at a brunch. Blueberry crisp – reminds me of poor ol’ George eating that worm again. :-)

Chocolate Upside Down Pudding

Here’s an old school pudding recipe. You could certainly make this with Jello instant pudding, or even Jello “cook for a few minutes” pudding, but why would you when you can make it from scratch?

Chocolate Upside Down Pudding (Marnie)

1 c flour

1/2 tsp salt

1 tsp B.P. (baking powder)

3/4 c white sugar

1/2 c milk

2 tbsp cocoa

2 tbsp melted butter

1 c walnuts

First mixture. Mix and put into greased pan. 8×8.

1 c brown sugar

4 tbsp cocoa

Mix. Dump onto first mixture.

Pour on 2 c boiling water. Bake 40 min 350. Turn upside down – serve warm. Wh cream if possible.

Gingerbread

If you are like me, you associate gingerbread with Christmas, but it’s not really. Gingerbread is a sweet and moist cake and often served with fresh whipped cream or whipped cream cheese frosting, if desired. A friend a long time ago made me a gingerbread cake for my birthday and it was delicious!

Bake as needed, I’m guessing 30 minutes at 350.

Gingerbread

1 cup sugar

2 eggs

1/2 cup butter

1/2 cup lard

1 cup molasses

1 cup sweet milk

1 dessert spoon soda

1 tsp ginger

1 tsp cinnamon

1 tsp nutmeg

A little black pepper

4 cups flour

Bake as needed
