Sounds like an “impossible” dish

Let it be said, I am not a fan of broccoli. It has a weird smell to me that I don’t really love. But, if you mix it with other things, like cheese, it becomes all the more flavorful! Chicken & broccoli is a common combination that can be quite appetizing. The “Jiffy mix” referenced in the recipe is a brand of baking mix similar to Bisquick or other prepared baking mixes. You can find the corn bread muffin mix at many grocery stores. The parent company, Chelsea Milling Company, was established in 1901 as a flour mill. According to their website, the Jiffy mix concept became popular in the 1930s, and has remained a market leader since that time. Not only do they have boxed mixes for consumers, restaurants are also able to purchase their mixes for commercial food service. They are located in Michigan.

Chicken & Broccoli (6-8)

1 cup Jiffy mix

1 1/2 c cooked ch chicken

3 eggs

1 c milk

1 1/2 c cheddar cheese, shredded

1 pkg (10-12 oz) frozen ch broccoli

1/4 tsp seasoned salt

1/4 tsp pepper

Preheat oven to 400. Grease 2 quart casserole dish. Place chicken & broccoli in greased casserole. Blend the baking mix, milk, eggs, salt & pepper in a separate mixing bowl on high. Mix well. Pour over chicken & broccoli & cheese.

Bake 35-40 minutes until the center of casserole until it comes out clean. Let stand 5 minutes & serve.

Easy meat loaf recipe

There are surely thousands of recipes for meat loaf, from the most basic off the side of the oatmeal box to elaborate stuffed and gravied creations. My friend Diane B once wrote a funny article about her “man loaf” recipe for a meat loaf stuffed with an Italian sausage, served with a side of cardiac arrest. I prefer to make my meat loaf on the boring side with onion soup mix and breadcrumbs. My mother always made baked potatoes along with meat loaf. However you prefer to make yours, enjoy! Meat loaf is the homey comfort food of America.

Meat Loaf

1 egg

1/2 c evaporated cream

1 tsp sage

1 tsp salt

1/2 tsp pepper

1 1/2 [pounds] ground beef

Parsley & 1/2 c onion

1/2 c swiss cheese

1 1/2 c bread crumbs

Sprinkle Swiss cheese on top & bake 350º 1 hour

This particular recipe card doesn’t have a title or name for this dish, so I called it Hamburger Pie. It reminds me of something my mom used to make, although I can’t think offhand what that was called either. But it did involve shaping the meat into a pie crust type of thing and then adding a filling. You would want to use ground beef here and be aware that the higher fat content you use, the more grease in the bottom of your cooking dish. So, maybe use a 93/7 ratio. It could also be made with ground turkey if you don’t want to use beef, but an addition of Worcestershire sauce or other flavoring might be in order.

Hamburger Pie

1 lb ground steak

1 tsp thyme

1/4 tsp pepper

1 tsp salt

Blend and press into 8″ pie pan

1 8 oz can tomato sauce

2 fresh small tomatoes diced

1 ground small green pepper

2 medium onions

1/2 tsp sweet basil

1/4 tsp oregano

1/2 c swiss cheese diced

1/2 tsp salt

Combine all ingredients and pour into the shell. Sprinkle with cheese (Italian) on top. 350º oven – 45 minutes

 

 

Easy Lasagna

I definitely like it when “easy” is part of the name of a recipe! Lasagna is always good too. I recently had my 20-something cousin and the rest of my family over for dinner and made a lasagna dish. While most of us enjoyed 1 or even a 2nd serving of the lasagna, my cousin (extremely athletic and living at college) polished off nearly half the dish! It is amazing what young men can put away!

Easy Lasagna

2 (15 oz) Ricotta cheese

2 eggs

2 c shredded mozzarella (8 oz)

1/2 c grated parmesan cheese

2 jars (2 8 oz) Ragu sauce

12 lasagna noodles

Preheat oven 375º. In bowl combine [1/2 Ricotta] cheese, eggs, 1 c mozzarella cheese & 1/4 c parmesan cheese.

In 13×9 pan spread [a small amount of] sauce, layer of uncooked noodles, 1 c sauce & Ricotta cheese [mix]. Top with rest of noodles & Ragu pasta sauce. Cover tightly with aluminum foil. Bake 1 hour. Remove foil. Sprinkle with mozzarella & parmesan cheeses. Bake uncovered 10 minutes. Let stand 15 minutes.

Don’t forget the mushroom sauce!

Here’s an interesting recipe called Chicken Loaf. I assume it is similar to meatloaf or ham loaf, in that it is shaped into a loaf and baked in a loaf pan. I just don’t know, though. In general, meat in a loaf has great potential to be delicious, but the farther you get from beef, the more dubious I become.

Chicken Loaf

4 eggs

3/4 c milk

1/2 c chicken broth

1/2 tsp salt

1/4 tsp pepper

1 c soft bread

1 T onions (chopped)

3 c chopped cooked chicken

1 10 oz package frozen peas & carrots @ room temperature

Beat eggs, add milk & remaining ingredients in order given! Mix well. Pour into greased loaf pan (9x5x3). Set in pan of hot water. Bake in moderate oven (350º ) 45-50 min or until done. Invert pan & serve with mushroom sauce.
