Chicken Loaf


Ring the dinner bell, it’s chicken loaf time!


Don’t forget the mushroom sauce!

Here’s an interesting recipe called Chicken Loaf. I assume it is similar to meatloaf or ham loaf, in that it is shaped into a loaf and baked in a loaf pan. I just don’t know, though. In general, meat in a loaf has great potential to be delicious, but the farther you get from beef, the more dubious I become.

Chicken Loaf

4 eggs

3/4 c milk

1/2 c chicken broth

1/2 tsp salt

1/4 tsp pepper

1 c soft bread

1 T onions (chopped)

3 c chopped cooked chicken

1 10 oz package frozen peas & carrots @ room temperature

Beat eggs, add milk & remaining ingredients in order given! Mix well. Pour into greased loaf pan (9x5x3). Set in pan of hot water. Bake in moderate oven (350º ) 45-50 min or until done. Invert pan & serve with mushroom sauce.
