Orange Swizzles

I bet this was fun at kids birthday parties. Maybe a bit like Orangina? It could also be good at adult birthday parties with the addition of vodka.

Orange Swizzles

1 can (12 oz) frozen Florida Orange Juice Concentrate

Orange half slices

Maraschino cherries

1 qt ginger ale

Reconstitute orange juice w/ ginger ale. Pour into glasses over crushed ice. Serve with orange slices & cherries on a straw. Makes 12 4 oz servings

Muffins

Now we have learned how to make our own homemade Bisquick, you need a recipe to test it! This is a base muffin recipe – you just add your preferred fruit. It would likely be nice with some cinnamon & apple, or blueberries, raspberries, etc.

Muffins (Bisquick basic recipe)

2 cups Bisquick

2 T sugar

1 egg

2/3 cup cold water or milk

Add fruit or whatever to recipe for favorite muffins. 400 for 15 minutes, yield 12

Homemade Bisquick

If you ever thought in a moment of frugality that you could make something just as easily as buy it (and often at less expense) then you might like to try this recipe for homemade Bisquick. Bisquick is a baking base mix that has numerous uses for pastry, biscuits, pies, cobblers and more. We use it to batter chicken fingers before baking them. I think if I put together a recipe of this to keep on hand, I would mix all except the shortening – then just add the shortening when you need it. Otherwise you have to store this in the refrigerator to keep it from going rancid. The conversion is roughly 2.5 T of shortening to a cup of dry mix. You may want to do your own math here, I’m not the best, but I’m figuring if the dry ingredients result in almost 12 cups of dry, then 2 cups of shortening divided by 12 equals .17 – .17 of a cup is approximately 2.5 T. Homemade Bisquick

I use a large bowl or dishpan

9 cups flour

2 2/3 cups dried milk

1/3 cup baking powder

1/4 cup sugar

1 T salt

2 cups shortening

Mix well all ingredients except shortening. Add shortening and mix well with pastry blender until mixture is smooth like Bisquick Mix. Pack in tight container and store in refrigerator in summer because of spoilage in heat. Otherwise store in dry place such as cupboard other seasons. Use up in a month. Can be used as Bisquick. Use Bisquick recipes. When measuring mixture level off, do not shake or pound down to measure.

Green Tomato Pickles

It’s spring and you might be planting tomatoes, cucumbers, and more in preparation for summer. If you have a bumper crop of tomatoes, you could try these greet tomato pickles. I guess if you have more than you can eat, this is one way to save the fruits of your labor. Note, a peck is just over 2 dry gallons, or 32 cups.

Green Tomato Pickles

1 peck green tomatoes

12 white onions

Vinegar

2 T celery seed

1 T mustard seed

1 cup mixed spices (pickling spices can be bought premixed)

Slice tomatoes and onions. Arrange in layers, sprinkling moderately w/ salt between layers and let stand overnight. Drain and place in kettle. Cover with mild vinegar & spices. Simmer 10 minutes. Pour into clean, hot jars and seat at once.

Golden Puffs

These sound a bit to me like donuts – they are a battered dough that you cook in hot oil. There’s probably a fancy name for this type of baked good – Paul Hollywood would know, right? :-) I bet they are very easy once you get the hang of it, and then you can get creative. Try filling them with bits of jam like an abelskeever or Boston cream or icing. Sounds delicious!

Golden Puffs

Sift 2 cups sifted flour, 3 tsp baking powder, 1/4 cup sugar, 1 tsp salt, 1 tsp nutmeg. Add 1/4 cup oil, 3/4 cup milk, 1 egg. Stir well with fork. Drop by teaspoon full into deep fat at 375. Cook until golden brown, about 3 min. Drain. Roll in cinnamon sugar or glaze by dipping into thin confectioners sugar icing.

1 tsp salt

1 tsp nutmeg

1/4 c oil use a light vegetable oil for the best taste, not olive oil or anything with a strong taste/smell

3/4 c milk

1 egg

Sift dry ingredients together. Add in oil, milk and egg. Stir well with a fork. Heat deep fat fryer to 375. Drop batter by teaspoons in the hot oil and cook until golden brown, about 3 minutes. Drain on paper towels. roll in cinnamon sugar or sugar icing glaze.
