I do have a problem. Several, really lol. But one of my biggest problems is that I have both a great memory but am forgetful. I can remember the exact clothing I was wearing when I met my husband 19 years ago, but I often can’t remember if I have used a recipe or not. Thankfully technology allows me to search my archives to verify, but due to my own poor organization and the sheer volume of recipes I have, there are duplicates and different versions. Were I able to sit down like at a real job and spend the needed time to organize everything, delete the unneeded scans, and then blog my little heart out, there wouldn’t be lags between posts. But what I find is that I feel quite overwhelmed when I want to write. I suppose I’ll have to deal with this sooner rather than later.
Today, we look at Apple Cake, which I don’t believe I have posted before. There are variations, like Apple Crisp, and Fresh Apple Cake, but not this exact card. I do like apples and apple cake. This one calls for diced apples rather than applesauce or apple pie filling. Some would omit the raisins. It sounds kind of like an apple pie in a cake, yum.
Apple Cake
1 cup Crisco oil
1 1/2 cup sugar
3 eggs
1 teas vanilla
2 cups flour
1 tsp cinnamon mix (alternately, this could be “1 tsp cinnamon, mix,” meaning mix the previously listed ingredients)
Fold in 3 cups diced raw apples
1/2 cup chopped nuts
1/2 cup raisins
Pour in greased floured pan
Bake 325º 45 min
