Spice Cake

Here’s a nice recipe for a spice cake. I bet it’s good, and another non-chocolate alternative. If you remember from an earlier post, Mrs Fish was Gram’s mother’s good friend, and Gram sometimes called her Auntie Fish.

My guess for this recipe is to cream the butter and sugar, add the rest, bake in a 9×13 or loaf pan depending on how much batter, for between 30-45 minutes at 350. That seems to be the general instruction on cakes. You could sprinkle powdered sugar across the top if you like.

2 cups sugar (1 1/2 may be better)

1/2 cup butter

2 eggs

1 cup sour milk

1 tsp soda

1 1/2 cups flour

1/2 tsp cloves

2 tsp cinnamon

little nutmeg

1 cup raisins

Today we feature another recipe from Mrs Roueche. I think this is written by Mrs Roueche because I don’t recognize this as Gram’s handwriting. I can’t read the last word on the card: If cream is thin add a ??

Sour Cream Cake

Beat together

1 egg beaten

1 cup sugar

salt

1 cup sour cream

1 1/2 cups flour

nutmeg or lemon

1/2 level tsp soda

If cream is thin add ????

Mrs. Bauschard’s Lemon Cake

I love love love lemon cake. I made one last January for my sister’s birthday. One thing that is great about lemon cake is that it’s delicious, fresh and moist, and good for people who don’t like or can’t eat chocolate. Yes, there are in fact people who don’t like chocolate I’m sorry to say. Anyway, this seems like a precursor to the “stripe it rich” cake of the 80s.

Mrs. Bauschard’s Lemon Cake

375 -glass

350 – al(uminum)

1 pkg Duncan Hines yellow cake mix

1 pkg lemon Jello instant pudding

1 c water. Blend

3/4 c Mazola oil. Blend

4 eggs. Beat 3 mins.

9×13 pan, Bake 40-50 min

Have ready 2 c confectioners sugar, 1/3 c lemon juice and 2 tbsp soft butter – keep warm –  when cake comes out of oven fork it thoroughly & pour over lemon & sugar mixture

Keeps very well even improves in days

Golden Chiffon Cake

The name of this cake just makes me want to bake it. It conjures images of girls in party dresses with fluffy crinolines, gloves, glasses of punch and boys with their hair slicked down on the other side of the room. I think I’d ice this with a vanilla icing and top it maybe with cut strawberries. Mmmmmm.

Golden Chiffon Cake

8x8x2 – Oven 350

In one bowl sift:

1 c all purpose flour

3/4 c sugar

1 1/2 tsp B.P.

1/2 tsp salt

Mix well and add:

1/4 c Wesson oil

3 egg yolks unbeaten

4 tbsp cold water

1 tsp vanilla

1 tsp grated lemon rind (if desired)

Beat until smooth

In large second bowl, put 1/2 cup egg whites & 1/4 tsp cream of tartar. Beat until very stiff peaks. Pour batter from first bowl gradually over beaten egg whites, folding in carefully. Don’t stir. Pour into ungreased pan. Bake 30-35 minutes at 350 until done. Hang upside down until cold. Remove from pan.

Mother’s White Cake

I assume that this is from Gram’s mother, Alice Sternberg. I don’t know much about her, but she lived with Gram’s family when she was older and suffering from glaucoma.

Mother’s White Cake

1 1/2 cup sugar

1/2 cup butter

Cream – add salt & vanilla

1 cup water

2 3/4 cups flour

3 heaping tsp Baking Powder

Whites of 4 eggs, beaten stiff – fold in

Add dry & wet alternately, beating hard.
