You can’t have a delicious Thanksgiving feast without an equally delicious dessert to follow it! When I think of Thanksgiving dessert specifically, I think of pie. So, here are some vintage pie recipes for your perusal.
Rhubarb Pie
3 T flour
1 c sugar
1 egg, beaten
2 c rhubarb, cut into small pieces
1 recipe Plain Pastry
Sift flour, sugar together. Add egg, beat thoroughly & add rhubarb. Line pie pan with crust. Pour in filling. Cover with top crust or lattice and bake 425º oven for 10 min. Reduce temperature to 350º& bake 35 min longer. 1 9″ pie.
Crazy Crust Apple Pie (Pillsbury)
Crust
1 c Pillsbury best all purpose flour*
2 T sugar
3/4 c water
1 t baking powder
2/3 cup solid veg shortening
1/2 t salt
1 egg
Oven 425º
* For use with Pillsbury’s self rising flour omit baking powder and salt
No need to sift flour; measure by lightly spooning into cup & living off. In small mixer bowl combine flour, sugar, baking powder, salt, water, shortening & egg. Blend well at lowest speed. Beat 2 min. at med speed. Spread batter in 10″ or 9″ deep dish pie pan. Carefully spoon filling into center of batter. Do not stir. Bake at 425º for 40 to 45 min till crust is golden brown. Note, I did not find an apple filling for this…
Pumpkin Pie
Combine 1 can (1 lb) cooked pumpkin
3/4 cup sugar
1 egg
1/2 t salt
1 can 5 1/3 oz evaporated milk
1/2 t cinnamon
Beat well
Mincemeat Filling
Combine 1 can (1 lb 5 oz) mincemeat pie filling
1 T lemon juice
1/2 t cinnamon
Blend well
Pumpkin Custard Pie (Dutch Pantry)
(Filling Below)
Crust
1 1/2 c flour
1/2 tsp salt
1/3 c lard
4 T water
Filling
1 c cooked pumpkin
3 eggs
1 T flour
1/2 tsp cinnamon
1/4 c Brown Sugar
1/2 c white sugar
1/2 tsp salt
1/3 tsp nutmeg
1 pt fresh milk
Mix ingredients in order listed & pour into unbaked pie shell. Bake 350º-400º oven for approximately 25 min
Sweet Potato Pie (350º – 30 min)
Mash 2 c sweet potatoes or yams
3 eggs
4 T oleo
1 c sugar
1 tsp vanilla
1 tsp nutmeg
1 T lemon juice
1/2 c bourbon
Mix well. Place in uncooked pie shell.
325º til knife slips out clean
Pumpkin Pie – 375º oven
Mix:
2 c pumpkin
1 1/8 c sugar
1 tsp salt
1 tsp ginger
1 tsp cinnamon
3 egg yolks (well beaten)
2 c milk
Beat whites of eggs stiffly & fold in. Bake in moderate oven till knife comes clean
Creamy Pumpkin Pie
1/2 cup cold milk
1 pk 6 serving size vanilla instant pudding
1 tsp pumpkin pie spice
1 cup pumpkin
1 /1 cups frozen whipped topping, thawed
1 graham cracker pie crust
In a large bowl, beat milk, pudding mix & spice with wire whisk for one minute. Mixture will be thick. Whisk in pumpkin. Stir in whipped topping. Spread in crust. Refrigerate at least 2 hours or until set.
