Cold Cucumber Soup

This was in with the Jane Kelley recipes but it is certainly not her handwriting. Maybe a friend wrote it out for her. A friend named B. Williams, maybe?

The concept of cold soup is one that I have not always embraced, although I did try cold gazpacho last year and it was interesting. I think I just like my soup hot, particularly with meat flavors in them. Maybe this is just a good April Fool’s Day soup.

Cold Cucumber Soup (B. Williams)

1 medium cucumber

1 can cream of chicken soup

1 cup sour cream

3/4 cups (chicken broth or celery soup)

Put all above ingredients in blender. Season with celery salt, worcestershire & dash of curry powder. Serve very cold in chilled cups topped w/ chopped chives (if desired)
