In the past we have had Apple Sauce Cake, Fresh Apple Cake, and an Applesauce Loaf from 1955. Today we have another Apple Cake, this one featuring fresh apples that have been diced. I imagine diced small would be best, maybe 1/4″ pieces. It also seems very easy and might find its way into my oven soon. I’ll be spending some weekends in the next several months in my 1860s persona, and a fresh apple cake would be the perfect treat for guests.
Apple Cake
2 eggs
1/2 c salad oil
2 c sugar
2 c flour
1 tsp soda
1/4 tsp salt
2 tsp cinnamon
4 c diced apples
1 c nut meats
Beat oil & eggs til frothy. Add sugar; beat well. Mix remaining ingredients. Stir into eggs mix. Pour into greased & floured 9×14 pan. Bake 350 45 min.
Sounds good. I think I would peel the apples first although it doesn’t say so. Probably it is a given.

I have this recipe, only it calls for a full CUP of oil. It’s sinfully delish all by itself, but even better if you add a scoop of whipped cream on top!
