Ah, lasagna, that layered pasta and meat casserole made of comfort and calories! This recipe is called Quick Lasagna, but I can’t see how it would be much quicker than “slow” lasagna, except maybe that the sauce is not simmered all day. These days, we open a jar of sauce and just use that. Prego! Not the brand, but the word that means “quick!” :-)
1/2 lb ground beef
1 c chopped onions
2 large garlic, chopped
2 tsp oregano (crushed)
2 cans tomato soup
1/2 c water
2 tsp vinegar
1/2 lb plain lasagna noodles (cooked & drained)
1 pt cottage cheese
1/2 lb mozzarella (cheese sliced thin)
Grated parmesan cheese
In saucepan, brown beef & cook onion, garlic, oregano. Add soup, water, vinegar. Simmer 30 min. Stir now & then. In shallow baking dish (12x8x2) arrange 3 alternate layers of noodles, meat & cheeses & sauce. Last of all sprinkle parmesan on top.
Bake 350º – 30 min. Let stand 15 in oven after you turn it off.
