Chili (Mary Jo Higgins)

This recipe was written inside a notecard and from years of use the notecard has torn in half at the fold and been taped back together. It has obviously been well used and loved. FYI, a #2 1/2 can is approximately 3 1/2 cups volume, or 27-29 ounces. The #2 can is 2 1/2 cups, or 20 oz.

Note that this recipe is vegetarian, but you could easily add ground beef to it. Enjoy!

Chili (Mary Jo Higgins)

Brown 1 large onion diced and 1 large green pepper diced in 3 T vegetable oil

Mix together and add:

1 #2 1/2 can tomatoes

1 1/2 t salt (I use less)

1/8 t paprika

1/8 t cayenne

3 cloves (whole)

1 bay leaf

2 T chili powder

garlic

Simmer the above mixture 1/2 hr & then add 1 #2 can of “chili-ets” or chili beans, cook 1/2 hr longer
