Here is a third recipe for ham loaf, which I plan on making for dinner tonight. My mother-in-law gave me a meat grinder attachment for my Kitchenaid Stand Mixer (which is my favorite appliance ever!) and I played with it yesterday. I had a small ham, which I ground up in anticipation of some ham spread and ham loaf. I don’t have any pineapple juice so I’ll have to figure out a substitute. I’ll let you know how it goes!
Ham Loaf
3 1/2 c ground ham
2 eggs beaten
3/4 c milk
3/4 c soft bread crumbs
no salt
1/8 t pepper
Combine for top
1/4 c br sugar packed
1 t dry mustard
1/3 c pineapple juice
350 – 1 1/2 hrs
1 1/2 hours sound like a very long time to bake. But it is quite a large loaf. I did notice that the other ones also had the same bake time. Your oven is on the hot side, so be prepared to remove it early.

This looks SO MUCH like my Mom’s handwriting. Do you know where this recipe came from?

I am not really sure but it might have been from eBay. I get a lot of source materials there. I realize that’s not much help.
