I always think of my grandmother and Christmas when I think about coffee cake. We had one tradition at Christmas time that we ate coffee cake before we could go downstairs to open gifts, because my father had to have some kind of breakfast but they didn’t want us kids to be forced to wait and look at the gifts under the tree. My grandmother made a very nice coffee cake that I have made several times myself. And, site reader Diane schooled us a while ago about the fact that coffee cake was in fact invented to be eaten with coffee! Being more liberal minded these days, you can eat coffee cake with or without coffee, if you like.
Streusel topping can be made with a variety of ingredients, but most commonly, brown sugar & cinnamon.
Coffeecake (Bisquick Basic Recipe)
2 cups Bisquick
2 Tbsp sugar
1 egg
2/3 cup cold water or milk
Put oven on 400. Grease 9 x 1 1/2 layer pan or regular cake or pie pan. Mix all ingredients with spoon, beat vigorously 1/2 min. Spread in prepared pan. Sprinkle on Steusel topping. Bake 20 to 25 minutes. Nice hot right out of the oven or cover w/ foil & warm in oven later before serving.
