Bread Pudding with Brandy Sauce

Often the bread pudding you get in a restaurant is dry, has too much cinnamon, or is too sticky. Perhaps this recipe will be a good one since of course it would be home made and fresh, there doesn’t appear to be too much cinnamon, and of course there’s that brandy sauce. :-)

Bread Pudding with Brandy Sauce – Serve 8

12 slices white bread

4 eggs

1 c sugar

1 t cinnamon

1/2 t salt

2 t vanilla

3 c milk

1 16 oz can applesauce

2 T butter

1 egg white

2 T sugar

1 slightly beaten egg yolk

1 c whipping cream

1/3 c brandy

Slice bread in 1/2 ” wide strips. Combine eggs, 1 c sugar, cinnamon, salt, vanilla, milk, applesauce & butter. Place 1/3 of strips in 11x7x2 baking dish in lattice pattern. Top with half applesauce mix. Repeat layers of bread & applesauce. Bake 325 1 hour til set.

Brandy Sauce

Beat egg white til soft peaks. Add 2 T sugar gradually – beat til stiff. Beat in egg yolk. Whip cream, fold into meringue. Stir in brandy.
