Overnight Salad

This recipe for an Overnight Salad really reminds me of what we called Ambrosia. I think my sister got sick after eating it – coincidentally – and so we didn’t have it again. So this overnight salad seems to me like something for a potluck. Double cream isn’t something as readily available to us these days and you could use heavy whipping cream, but the dish won’t come out quite as thick as if double cream were used.

Overnight Salad (Cath Carroll)

2 egg yolks

juice of 1/2 lemon

1/2 cup cream

Cook until thick in double boiler then add:

1/4 cup double cream whipped

1/4 cup white grapes

5 cents worth of marshmallows, quartered

1/4 cup blanched almonds (cut)

1/2 can pineapple (small) cut

Let stand in ice box 24 hours & stir well before serving

  1. I don’t remember getting sick but I couldn’t stand the taste of Ambrosia. It was too sweet and I didn’t like marshmallows. Incidentally, how many is 5 cents worth of marshmallows? Inquiring minds want to know.
