Here’s another recipe for an overnight salad. I assume these are overnight salads because they taste better if the ingredients sit together and chill in the refrigerator for a while. Royal Anne cherries are a sweet variety of cherries, generally used to make maraschino cherries (which I love). The most common brand I have found is Oregon, but they are all in heavy syrup. I don’t know if this recipe intends to have the syrup included or not. Also, it’s a bit out of order for reading but in perfect order for working. First prepare your fruit, then make the pudding, then combine all the ingredients.
The dish might be good if you substituted Nilla Wafers for the marshmallows – since we all agree that marshmallows are not the best ingredient – and served as a dessert, not a salad. I also find it strange that this calls for dry mustard. At least there’s no jello, right?
Overnight Salad
1 can Royal Anne cherries
1 can pineapple
cut and drain
Quarter 30 marshmallows
Put in dish
Yolk of 4 eggs beaten
pinch salt
pinch dry mustard
Juice of 1 lemon
1/2 cup plain cream
Stir together & cook in double boiler until thick. When cool, pour over cherries, pineapple & marshmallows & let stand 1 hour. Whip 1/2 pt cream & stir together. Let stand in ice box overnight.
