With the holiday coming up I thought I’d highlight some of these recipes for those who might still be wondering just what to make. It seems rather standard, but not everyone is like me and makes the same dishes year after year. My husband likes to have a certain array of food at Thanksgiving dinner, so that’s what I do. But if you like to try new things, here are a few ideas. Next post will feature desserts!
Turkey Stuffing – 15 lb turkey
1 lb sausage
1 c chopped onions
2 c chopped celery
6 T butter
1 T salt
2 tsp sage
1/2 tsp basil
6 c coarse bread crumbs
3/4 – 1 c consomme, apple juice or water
2 c chopped apples
Brown sausage, drain fat, saute onions & celery in butter. Add seasonings. Combine with breadcrumbs. Add apples & liquid. Can be baked separately in dripping pan – 350 25 min.
Asparagus Delish
2 pkg frozen cut asparagus
1/4 c butter (or marg)
1/4 c unsifted flour
1/2 tsp salt
Sash pepper
2 1/2 c milk
1 c crumbled cheese
3 hard cooked eggs (sliced)
Preheat oven 350 F. Lightly grease 1 1/2 qt casserole.
Cook asparagus as directed on package. Drain.
Heat butter in medium sauce pan. Remove & add flour. Stir in salt & pepper and gradually milk.
Over med heat bring to boiling, stir constantly until thickened & smooth.
In prepared casserole (layer in order) half of asparagus, cheese, eggs & sauce. Repeat.
Bake 15 min. Sprinkle with parsley to garnish.

Rory Calhoun’s Sweet Potatoes – 350 45 min
2 cans (16 oz) sweet potatoes
1 can (4 oz) crushed pineapple, drained
1/2 c butter
3/4 tsp cinnamin
1/2 pkg (16 oz) marshmallows
Ground nutmeg
Combine potatoes & pineapple in buttered baking dish. Combine melted butter & cinnamon in skillet. Pour over sweet potatoes & pineapples in casserole. Top with marshmallows. Sprinkle on nutmeg.
Party Green Beans (Shirly McCrosby)
2 cans green beans (drain some liquid)
1 c golden mushroom soup
Oleo on top
Combine & put in slow oven. 5 minutes before it’s done, put on top canned onion rings & some buttered bread crumbs
Bake about 45 – 1 hour
Green Beans in Sauce
2 T oleo
4 T flour
Salt
3 c green beans
2 c milk
1/2 lb shredded american cheese
3 hard cooked eggs, chopped
Make cream sauce with oleo, flour & milk. Add 3/4 of cheese. Stir until melted.
Place hot beans on platter. Put shredded cheese & eggs on top. Add sauce. Place under broiler until cheese melts. Serve hot.
I believe that’s asparagus deluxe. Everything that was the least bit fancy was deluxe in those days
