I definitely like it when “easy” is part of the name of a recipe! Lasagna is always good too. I recently had my 20-something cousin and the rest of my family over for dinner and made a lasagna dish. While most of us enjoyed 1 or even a 2nd serving of the lasagna, my cousin (extremely athletic and living at college) polished off nearly half the dish! It is amazing what young men can put away!
Easy Lasagna
2 (15 oz) Ricotta cheese
2 eggs
2 c shredded mozzarella (8 oz)
1/2 c grated parmesan cheese
2 jars (2 8 oz) Ragu sauce
12 lasagna noodles
Preheat oven 375º. In bowl combine [1/2 Ricotta] cheese, eggs, 1 c mozzarella cheese & 1/4 c parmesan cheese.
In 13×9 pan spread [a small amount of] sauce, layer of uncooked noodles, 1 c sauce & Ricotta cheese [mix]. Top with rest of noodles & Ragu pasta sauce. Cover tightly with aluminum foil. Bake 1 hour. Remove foil. Sprinkle with mozzarella & parmesan cheeses. Bake uncovered 10 minutes. Let stand 15 minutes.
