Cocktail party food – Part 2

Let’s fill in your cocktail party menu with some more great recipes!

Here’s a party basic that you can alter to your own specifications.

Stuffed Eggs

6 hard-cooked eggs

4 tbsp soft butter

3 tbsp mayonnaise

2 tsp minced onion

1 tsp prepared mustard

1/2 tsp garlic salt

Dash of cayenne pepper

Mayonnaise

Parsley sprigs

Halve eggs and mash yolks with fork. Mix them with butter, mayonnaise, onion, mustard, vinegar and seasonings. Fill egg whites, garnish with a dab of mayonnaise and tiny sprig of parsley on top of each half.

Here’s a yummy dip that hopefully won’t send any of your guests into anaphylactic shock. Serve with crackers.

Shrimp Dip (Cathy Spurlock)

2 lb boiled shrimp, grated coarsely

juice of 1 lemon

10 minced green onions

salt & pepper to taste

1 (8 oz) pkg cream cheese, softened

Worcestershire sauce

hot sauce

mayonnaise

Soften cream cheese with lemon juice. Add shrimp and green onions to cream cheese mixture. Add enough mayonnaise to give dip consistency. Season with Worcestershire sauce, hot sauce, salt & pepper to taste. Refrigerate for 8 hours before serving. This will give best flavor.

This one could be made with imitation crab if you felt it necessary.

Crab Meat

1 6 oz pkg crab meat

1 8 oz pkg cream cheese

dash of onion salt

dash of garlic salt

lemon juice

Worcestershire sauce

1 tsp horseradish

1 tbs spoon margarine

Electric mixer. Escort Crackers.

 

 

Finally, you can’t really go wrong with balls of cheese at a cocktail party, now can you?

Cheese Balls

1 pound hot sausage

1 small jar cheese whiz

3 cups bisquick

1/2 cup milk

Thoroughly combine all ingredients in large mixing bowl, shape into one inch balls and place on ungreased cookie sheet. Bake in oven 400 12 to 20 minutes
